This corn salad recipe is healthy, tasty and vibrant in colour. It only takes around 25 minutes to prepare and cook and this recipe gives you around 4 servings.

This is just the perfect side dish for when you want to add more colour to your dinner. We used a pack of Emborg frozen corn we got from Whatsinstore, and by the end of it had a tasty and vibrant dish which can be added to any dinner.
You can get this corn salad recipe done in under 25 minutes and better still, it requires no expert skills in the kitchen. You can be an absolute beginner and still make an amazing corn salad. All you need are the ingredients, a knife, a chopping board and a pan.
Corn is not only beautiful with a bright vibrant yellow colour but also nutritious. It is rich in Vitamin C, fibre, folate, thiamin, phosphorus and magnesium. It is known to help with digestion and eye health. Due to its high amount of starch, it is important to eat this moderation as a high amount can spike blood sugar. Corn contains more carbs and sugars than many other vegetables.
To obtain the full nutritive value you can either eat fresh corn, or opt for frozen corn, provided that it has been frozen on the day of harvest. We opt for Emborg frozen sweet corn due to the fact that they freeze on the day of harvest, which adds quality to the product.
For additional colour, we decided to add other colourful ingredients such as tomatoes, red onions and sumar for their vibrant red colour. Parsley added a vibrant green colour as well as freshness. You can also add other ingredients such as jalapenos which can add even more colour to the dish, as well as a spicy kick. When it comes to jalapenos, you either love or hate them. In our case, we decided to leave jalapenos out of our version of this side dish, since not ever one of our dinner guests might be a fan!
As we have mentioned, we have added sumac in this corn salad. Sumac spice is made from dried berries. This spice enhances the taste of meats (we love it on chicken), vegetables, salads (such as this corn salad) and even some desserts.
This Middle Eastern spice is not too popular with the Western world which is a shame due to the unique taste it gives dishes and the health benefits. Some research suggests that sumac spice can help control blood sugar and relief to pain caused by muscle exhaustion. It is a very strong anti-inflammatory spice.
Here is the recipe for our corn salad:
Ingredients:
1 packet Emborg Frozen Sweet Corn (450g)
2 medium tomatoes
1 medium red onion
4 garlic cloves
½ lime
2 tbsp chopped fresh parsley
2 tbsp olive oil
2 tsp sumar
Salt and pepper
Method:
- Chop up the onion and garlic
- Saute the garlic and onion in a pan with the olive oil (2 tablespoons) for around 10 minutes until soft. Keep stirring.
- Chop up the fresh parsley and dice the tomatoes.
- Add the parsley, frozen corn, tomatoes, and sumac to the onion and garlic and cook for 2-3 minutes until the corn is cooked.
- Add juice from ½ a lime.
- Add salt and pepper.
Although this corn salad works best as a side dish, you can add some other vegetables and a protein such as chicken, tuna or salmon and make this as a main dish. We definitely suggest trying this as a side dish. We guarantee that your guests will love this one and your corn salad side dish will make a regular appearance at your dinner party.
