These Rudolph cupcakes will definitely make your Christmas sweeter!

Family fun times ahead this Christmas with this Rudolph cupcakes recipe!

A lot of our Christmas dessert recipes are not very kid-friendly. Either they contain some form of alcohol or contain ingredients which do not appeal to children. Both our Christmas log and Christmas Gingerbread Tart contain some alcohol. You can always remove the alcohol from the recipe but we prefer keeping it in the recipe. Another compromise we propose are these easy Rudolph Cupcakes for the kids. 

The Rudolph cupcakes recipe is quite an easy recipe without any additional ingredients which might not be appealing to children. The best part of these Rudolph cupcakes is definitely the decorations part. With chocolate spread as a base of the Rudolph cupcakes decorations (we used Novi CremaNovi from Whatsinstore) and two pretzels as antlers, two chocolate chips as eyes and one red m&m as a nose, these will be a favourite with your younger guests.

Whatsinstore were kind enough to provide us with Stork butter and Novi CremaNovi which were the perfect choice for this recipe. We have often used Stork butter in other recipes for our afternoon tea and it has been the butter of choice for our baking needs. Novi CremaNovi is surely going to be a favourite with your guests who love Chocolate Hazelnut spreads.

These Rudolph cupcakes also are a lot of great fun to prepare with your children during the festive season. If you’re looking for some fun activities to do with your kids on the public holidays in December or the Christmas holidays, this would be a great option. Given that they are very easy to make, kids love to make these and feel proud of their artwork. It only took us 15 minutes to prepare the batter, 20 minutes to cook and 20 minutes to decorate, so this can easily be a great way to spend an hour with your young ones.

Rudolph cupcakes

The ingredients for these Rudolph cupcakes are fairly easy to find. We would recommend using the icing sugar tube to draw the eyes because it does make it easier. However, if you cannot find this, you can make your own icing sugar paste by using icing sugar and water. This sugar paste keeps for around 3 days so you can easily prepare it beforehand. If you want to make the batter more interesting, you can try a different cupcake recipe such as red velvet.

Rudolph cupcakes

Ingredients:

150g self-raising flour

150g Stork Butter

150g caster sugar

1 Novi CremaNovi

3 large eggs

1 tsp vanilla essence

Icing sugar tube

24 chocolate chips

24 pretzels

12 red chocolate M&Ms

Method:

  1. Preheat the oven to 180oC
  2. Melt the butter in a microwave for 40 seconds
  3. Sift the flour and mix in the butter.
  4. Add the caster sugar and vanilla essence. 
  5. Beat the eggs and add to the mixture. Mix well.
  6. Evenly spread the mixture between the 12 paper liners and bake for 20 minutes or until cooked through.
  7. When cooked, remove from the oven and allow to cool.
  8. In a small bowl, mix two tablespoons with icing sugar until a light brown, much lighter than Novi CremaNovi
  9. Coat the surface of the cupcakes with Novi CremaNovi spread. Smooth out with a palette knife.
  10. Using the light brown chocolate mixture. Make a circle for the reindeer muzzle.
  11. Draw two eyes around 4mm radius with the icing sugar tube. Place a chocolate chip in the centre of each white eye. Place the red M&M as a nose in place.
  12. Place two pretzels on each cupcake as ears. Serve and enjoy.
