This recipe is so versatile as it can served straight from the hob, or given an extra crunchiness by adding breadcrumbs and popping it into the oven. But the consistent part is the glorious stringy cheese! Can you just imagine it?!

This Mac n’Cheese recipe calls for mature cheddar because as they say, age only matters if you are cheese, right? Aged cheese has a stronger taste, so it will do wonders in this pasta bowl!

So here is what you will need. Enjoy!

Ingredients:

500g dry pasta
115g unsalted butter
500ml warm milk (warm either in a microwave or in a pan)
½ cup tbsp flour
2tsp mustard powder

1 tsp salt
1 tsp pepper
300g shredded mature cheddar cheese
100g Pecorino Romano cheese
1½ cup breadcrumbs

Mac n’Cheese

Instructions:

  1. Preheat oven to 180C. Line a baking dish with parchment paper.
  2. Cook pasta about a minute less than packet instructions. Drain and rinse with cold water and set aside.
  3. In the meantime, in a deep pan on medium heat, melt the butter and slowly sift and whisk in the flour and mustard powder until combined. Season with the salt and pepper and remove from heat.
  4. Add the warmed milk and stir continuously until creamy. Return to the hob on medium heat.
  5. Add in the cheeses, stirring till most of it is melted and add in the pasta. Lower heat and mix until combined.
  6. Pour mixture into the oven dish, cover with breadcrumbs and bake at for 25-30 minutes.
