Greek player Kostas Tsimikas prepared some lovely fajitas which inspired this recipe here. For this fajitas recipe, we made use of Santa Maria Fajita Seasoning Mix for the perfect blend of flavours.

You can make 4-5 wraps from this fajitas recipe. This recipe has 412 calories per serving and 16g of fat. Also, this recipe only takes 20 minutes to make, making it a great time saver. Although the fajita mix is gluten free, the tortilla wraps are not, so do keep that in mind. We used Santa Maria Large Flour Tortilla which has 6 large tortilla wraps and 35% lower CO2 impact.

This recipe has a lot of ingredients but is very simple to make. Let’s get started.

Ingredients:

1 packet Quorn pieces

4 Santa Maria Large Flour Tortilla

400g tomatoes

300g kidney beans

150g mushrooms

125g baby spinach

100ml vegan greek yoghurt

30g vegan cheddar cheese

1.5 red onions

1 red bell pepper

1 orange bell pepper

1 garlic clove

1 red chilli

2 tbsp olive oil

1 packet Santa Maria Fajita Seasoning Mix

1 lime

Bunch of parsley

Method:

  1. Mix the Vegan Quorn Pieces in 1 tablespoon of olive oil and Santa Maria Fajita Seasoning Mix. Put aside
  2. Slice ½ red onion, red pepper, orange pepper and mushrooms
  3. Peel and finely chop the garlic clove
  4. In a frying pan, heat 1 tablespoon of olive oil.
  5. Add Vegan Quorn Pieces and stir for a few minutes
  6. Add the onion, garlic and peppers. Cook for another 4 minutes on a low heat.
  7. Add the mushrooms and spinach and cook for another 3 minutes.
  8. Add the kidney beans and cook for another minute.
  9. Put in a bowl and set aside.
  10. Dice the tomatoes, remaining red onion and put in a bowl.
  11. Finely chop a chilli, making sure to remove the seeds, and add to the bowl
  12. Finely chop the parsley and add
  13. Add lime zest and juice. Mix well. Set aside.
  14. Fill each wrap with fajita mixture and top each filling with grated cheese
  15. Serve with Vegan Greek Yoghurt and Salsa
